Both wines are vinified the same way: with grapes crushed and pressed, fermentation with ambient yeast, 12-month ageing in barrels comprising 20% new oak, after which another two months in tank.

All cuvées are made without fining, filtration done only when necessary. SO2 is lightly added only prior to bottling.
